Mediterranean Quinoa Chickpea Salad

Ingredients:
For the Tzatziki sauce:
- 1 cup Plain Greek yogurt
- 1/2 cup grated or minced cucumber
- 1-2 Tbsp lemon juice
- 1/2 Tbsp olive oil
- 1-2 garlic cloves, grated or minced
- 1/4 tsp salt
- 1 Tbsp chopped fresh dill
For the salad bowl:
- quinoa, cooked
- chickpeas, drained and rinsed
- fresh parsley, chopped
- mixed greens/arugula
- tomatoes, diced
- cucumber, diced
- pickled onions or fresh red onions
- lemon juice
- olive oil
- balsamic vinegar
- feta cheese
- Mix all tzatziki sauce ingredients in a bowl and set aside.
- Start assembling your salad bowl, no true measurements, using your best judgment with however much you want your portion to be! In a bowl or plate, add the cooked quinoa, chickpeas, parsley, mixed greens, tomatoes, cucumbers. Squeeze some lemon juice and add a light drizzle of olive oil and balsamic vinegar, gently toss until well combined.
- Top with pickled onions, tzatziki sauce, and feta cheese, and enjoy!
